The northern Spanish town of Pamplona is best known for its annual bull run that took its current form in the late 18th Century. A few years later, in 1844, the Licores Baines distillery was founded, selling Pacharan, Brandy and Herbal liqueurs to the Navarre region and beyond. Baines have had nearly 200 years to perfect their art and their sturdily tasty drinks are as popular as ever. As with the bull run, prepare for impact!

Tasting Notes

Pacharán Sadar presents an eye-catching, vibrant ruby-red colour in the glass with beautiful violet reflections. On the nose, it offers fresh, expressive, and highly enticing aromas. The bouquet is markedly fruit-forward, featuring clear scents of ripe sloe berries, cherries, and wild forest fruits, all perfectly intertwined with a delicate, sweet aniseed undertone and subtle herbal notes.

The entry on the palate is exceptionally smooth, unctuous, and velvety. It delivers an intense, rounded, and sweet flavour profile where the juicy, tart nature of the sloe berry takes centre stage. This fruitiness is beautifully balanced by a gentle, integrated background of liquorice and mild spices, preventing the sweetness from feeling overpowering. The finish is long, remarkably pleasant, and fruity, leaving a lingering, warm aftertaste that beautifully marries red fruits with a soft, comforting touch of anise.

Description, Estate History, and Distillation

Pacharán Sadar Baines is a quintessential, authentic Spanish sloe liqueur coming from the renowned Navarra region in Northern Spain. Packaged in a 100cl glass bottle with an alcohol content of 25% ABV, this spirit represents a magnificent entry-level expression from a legendary producer.
The story of the estate dates back to 1844, when Licores Baines was founded in Pamplona, the historic capital of Navarre. For over 150 years, the company has dedicated itself to crafting high-quality beverages. Baines holds a special place in Spanish distilling history as one of the very first companies to transition what was historically a homemade, rural digestif into artisanal commercial production. They have successfully maintained this small-batch, traditional focus for generations.

The strict production methods mirror ancestral customs to preserve the artisan nature of the spirit. Local wild sloe berries, known as endrinas, are harvested in the autumn when perfectly ripe. These small plum-like fruits are carefully selected and placed into large containers to undergo a patient, rested maceration process in a premium, sweetened anise distillate. The fruit is left to macerate for a minimum of three months. During this slow infusion, the sloes naturally release their deep red pigment, refreshing acidity, and rich cherry-like qualities into the liquid, expertly balancing the bold liquorice characteristics of the anise spirit.

Serving and Cocktail Suggestions

To experience Pacharán Sadar at its finest, it should be served slightly chilled or poured over ice in a lowball or long glass, making it the perfect post-dinner digestif. In colder weather, it can even be creatively added to hot herbal infusions for a comforting after-dinner drink.

For cocktail enthusiasts, its balanced fruit-and-herb profile makes it an incredibly versatile mixer:
Pacharán Collins: Muddle fresh oregano leaves in a tall glass with fresh lemon juice and a touch of simple syrup. Add ice, a generous pour of Pacharán Sadar, and top with soda water for a deeply refreshing, aromatic summer highball.
•    Navarran Spritz: Combine Pacharán Sadar with a dry Spanish sparkling wine (Cava) and a splash of soda water over ice. Garnish with a twist of orange peel to highlight the liqueur’s bright red fruit profile.

Food Matchings

Thanks to its complex interplay of sweetness, acidity, and herbal notes, Pacharán Sadar pairs wonderfully with a variety of foods at the end of a meal.

•    Cheese: It is a sublime companion to rich, cured cheeses. Try it alongside traditional Basque or Navarrese variants like a smoky Idiazabal or a sharp, matured Roncal cheese, where the liqueur's fruitiness beautifully cuts through the savoury intensity.
•    Cured Meats: It acts as a brilliant palate cleanser when served with spiced Spanish sausages such as txistorra or chorizo, as the bright sloe acidity softens the greasiness of the meat.
•    Desserts: Drizzle Pacharán Sadar directly over vanilla bean ice cream or fresh summer berry tarts. It also serves as a perfect match for dark chocolate desserts or traditional pastries, harmonising with the light bitterness of the sloe stone.
