Estate History and Distilling Methods
Founded in 1977 by Paolo Marolo in Alba, Piedmont, the distillery was born from a vision to elevate traditional, rustic spirits into artisanal masterpieces that authentically reflect the local terroir. While Distilleria Marolo is globally renowned for pioneering single-variety grappas using discontinuous bain-marie stills-a slow, gentle heating method that protects delicate grape profiles-their aromatised creations like Chinato follow ancient family recipes. The botanicals undergo a prolonged maceration before being expertly blended and aged in small oak casks to achieve total harmony.
