François Voyer Cognac Grande Champagne XO is an exceptional extra old cognac bottled at 40% ABV in a 70 cl size, featuring rich tasting notes of baked orchard fruits, warm honey, and floral rancio, crafted by a historic family estate using traditional double distillation on the lees.
Tasting Notes
• Nose: Complex aromas of vanilla, dried plum, honey, and subtle spices intertwined with floral and fruity undertones.
• Palate: A velvety and enveloping texture with a rich profile of baked orchard fruits, warm spiced honey, and an unexpected whisper of passionfruit and orange marmalade.
• Finish: A slow, elegant fade leaving a ghost of polished wood, delicate rancio, and candied citrus peels.
Estate History and Distilling Methods
The Voyer family has cultivated vines in the premier cru of the region since the 1870s, passing down expert knowledge through five generations. They grow, distil, and bottle entirely in-house to maintain strict quality control. Wines from the Ugni Blanc grape are distilled traditionally on the lees in Charentais copper stills, capturing rich and aromatic components. The resulting spirit is aged first in new Limousin oak barrels to extract initial tannins, then transferred to older barrels in damp cellars for a slow, multi-decade maturation.
Serving and Cocktail Suggestions
• Neat: Sip slowly and allow it to warm in the glass for at least 10 minutes to let the bouquet fully develop.
• On the rocks: Pour over a single large ice cube to subtly open up the fruit and spice layers.
• Classic Sidecar or Sour: Use as the luxurious base spirit in a high-end cognac sour, blending with fresh lemon juice and sugar syrup.
Food Pairing Matches
• Desserts: Pairs wonderfully with fruit tarts, orange marmalade cakes, or light vanilla pastries.
• Cheeses: Complements the nutty and earthy depths of mature blue cheeses or aged goudas.
