Vecchio Magazzino Dogonale means Old Customs Warehouse in Italian.

Giacomo, great-great grandfather of current owner Ivano Trombino ran a small, rural warehouse in Consenza, Calabria from the 1850’s that sold farm produce, agricultural goods and crucially, smuggled spirits. In 1871, three English sailors, tired of life at sea arrived and worked here for decades. Their names were Jefferson, Roger and Gil and these are names of some of Vecchio’s finest creations. Legend has it that the Englishmen began distilling here and a long tradition of locally produced spirits was born.

The details of this story are lost to time, but what isn’t under dispute is the incredible quality of Vecchio’s drinks. It’s good country in Consenza with a broad range of local botanicals from sun drenched coastal plains to high altitude mountain terroir and these have enabled Vecchio to produce a fine and varied range of wonderful spirits.  Our suggestion? Crafted in Calabria by the renowned Old Customs Warehouse, this artisanal liqueur elegantly balances historical botanical traditions with an innovative recipe.

Tasting Notes

Appearance: A bright, captivating amber hue with a smooth, velvety body.
Aroma: A complex and inviting bouquet that evokes an aromatic herb garden in full bloom. Initial wafts of woody gentian and warm galangal root are perfectly uplifted by a sharp, crisp stream of cooling botanicals.

Palate: Uniquely formulated without any citrus fruits, the palate relies entirely on deep, earthy tones. Enveloping layers of bittersweet artichoke leaf, bay laurel, and pungent wormwood cover the tongue. Its initial boldness seamlessly transitions into a softer, velvety texture.

Finish: A beautifully long, slightly balsamic, and cooling finish driven by steam-distilled garden greens.

Distilling Methods

The character of Amaro Intervallo relies heavily on a precise, dual-processing method. Strong bittering agents—such as artichoke, gentian, galangal, laurel, and wormwood—are meticulously extracted through cold alcoholic maceration to pull out their deep, medicinal properties. To complete this harmony, a delicate blend of fresh mint, sage, and marjoram is expertly processed through a live current of steam. This gentle steam distillation captures the bright essential oils, injecting a vibrant and unmistakable freshness into the bitter base without burning the delicate leaves. The resulting liqueur is bottled at a refined 28% ABV in an elegant 50 cl format, finished with a bespoke 100% cotton paper label.

Serving & Cocktail Suggestions

The Living Room Pour (Neat): To capture the magic of the bottle, serve it completely pure at room temperature or slightly chilled after dinner. Pour it into a small, elegant tumbler or a chilled glass to relax with in the comfort of a lounge.

Intervallo Spritz: For a lighter, pre-dinner serve, pour a generous double shot over plenty of ice, top with dry premium tonic water or soda, and garnish with a fresh sprig of sage or marjoram to amplify the steam-distilled top notes.

The Black Manhattan Variant: Replace standard sweet vermouth with Amaro Intervallo in a classic whiskey sour or a Manhattan cocktail. The savory herbal structure pairs beautifully against the spicy notes of rye whiskey or bourbon.

Food Pairings

As an authentic Amaro da Salotto (parlour liqueur), it is designed to be paired with post-dinner treats.
